3 Reasons Why I Love Buddha Bowls
Buddha bowls are a mainstay in any plant based diet because of how easy they are to throw together. They are basically my go to idea whenever I have guests over and have been served at every single dinner party I have ever hosted. Simply put, I love them. Here’s why:
Literally anything goes. There are no rules for what makes a perfect buddha bowl. I love that I get to be creative and try out different combinations of veggies, starches and sauces.
I can pile on as many super foods as I want. They are a great way to get all your servings of vegetables, plant based proteins, healthy fats and more.
They are super filling and keep me nourished for long periods of time.
All the ingredients in this bowl can be found locally in Accra : wild rice, cucumber and mint salad, massaged kale, roasted pumpkin and beets, spicy green tahini, and my absolute favorite: toasted egusi/ agushie. Egusi/ Agushie is a high protein ingredient common in West African cuisine. It is a type of melon seed that packs a punch for the amount of plant based protein (37.4% of weight). Toasting them, is one of my favorite ways to consume them.
